Clean Lemon Chia Seed Muffins


So I'm still over here on this lemon kick! Maybe it's me wishing for an early spring! Or, most likely, it's because it's my husband's favorite. And probably a pinch because I have a brand new double wall convection oven that I'm dying to use every time I get the chance considering I lived months with only a slow cooker to make meals and desserts in! So, here is the clean lemon chia seed muffin recipe! Let me know how they come out for you!

Ingredients 1 1/2 cups oat flour 1 tsp baking powder 1/4 teaspoon baking soda 1/2 teaspoon salt 1/2 cup olive oil 1/2 cup honey 2/3 cup plain greek yogurt 1 lemon - zested and juiced 1 large egg 1 teaspoon vanilla extract 2 tablespoons chia seeds Directions Preheat oven to 400 degrees and place 12 liners in a muffin tin. In a medium bowl, whisk together flour, baking powder, baking soda and salt. Set aside. In a large bowl, mix together olive oil, honey, greek yogurt, and lemon until fully combines. Then add the egg and vanilla and mix thoroughly. Add dry ingredients to wet ingredients, stirring until just combined. Fold in chia seeds. Bake for 13 - 15 minutes, until muffins are golden on top and a toothpick inserted in the center comes out clean. Enjoy....and hide them from your husband ;)
