This salmon is DELICIOUS! We had this salmon at our first dinner party in our new home and it was a hit! I had a couple friends ask me for the recipe and they have enjoyed it as well. So, it's time to share this goodness with the world! If you are celebrating Lent and practicing meatless Fridays, then this is coming at just the right time! Introducing your new Friday dinner! This will be a regular on your menu!
Ingredients: 12 ounces of salmon 1 egg 1 - 2 tablespoons olive oil Breading: 1/3 cup crushed almonds 1/3 cup grated parmesan cheese 1 tablespoon dried basil 1 teaspoon garlic powder 1/2 teaspoon salt 1/2 teaspoon pepper Directions: 1. Mix breading ingredients together in large bowl, set aside.
2. Whisk egg in a separate bowl. Dip the salmon in the egg, then the breading mixture.
3. Heat olive oil in a skillet on medium heat. Once the pan is ready, add the salmon and let cook on one side for 3 - 4 minutes until golden brown. Flip and cook for an additional 2 - 3 minutes on the other side.
4. Enjoy Tip: We asked our grocery store butcher to remove the skin from our salmon and cut it into proper portions. This made it easier to prepare and cook! Quick and easy! We enjoy this with a side of parmesan asparagus (recipe to come).
