Caprese Chicken with Sweet Potato Side

Yes, we are lean, mean fixate cooking machines over here! Here is yet another absolutely DELICIOUS recipe from Autumn Calabrese's FIXATE cookbook!

Caprese Chicken

Serves: 1

Prep Time: 10 minutes Cooking Time: 10 minutes 1 (4 oz) Chicken Breast

1 dash ground black pepper

1/2 tsp olive oil

1 serving calabrese salad (see below) Fresh basil leaves

1. Season both sides of chicken evenly with pepper

2. Heat oil in medium nonstick skillet over medium heat

3. Add chicken; cook for 3 to 4 minutes on each side, or until no longer pink in the middle

4. Top chicken with slices of tomato and basil leaves form Calabrese salad. Top with Mozzarella slice (including pesto sauce)

5. Reduce heat to medium-low; cook, covered, for an additional 1 to 2 minutes, or until cheese is melted and tomatoes are softened

6. Serve topped with fresh basil leaves

Prep Time: 15 minutes

Cooking Time: NONE

2 tsp. prepared pesto sauce

2 thick slices large tomato

4 large fresh basil leaves

1 slice fresh mozzarella

1 dash sea salt

1 dash ground black pepper

4 tsp balsamic vinegar

1. Spread 1 tsp pesto sauce on serving plate in circular motion. Top with 1 tomato sauce, 2 basil leaves, and mozzarella

2. Spread remaining 1 tsp pesto sauce on mozzarella slice; topw ith remaining tomato slice and remaining basil leaves

3. Season with salt and pepper

4. Drizzle with balsamic vinegar; serve immediately
