Apple Banana Muffins


These muffins have proven to be a PERFECT "fix" for me in the morning when I really don't feel like cooking breakfast. It's a quick, easy and convenient on-the-go fix as well. Something you can easily eat in the car! It's a kid and husband friendly recipe as well! Another fantastic idea from Autumn Calabrese's Fixate cookbook! I was pleasantly surprised with how easy these were to whip up. They bake quick and the clean up is easy too! (Always a plus!) Give these guys a place in your Sunday routine and have them prepped for the week!

**If you cannot find almond flour, you can make your own by using plain almonds and a food processor! Just be sure not to over process! They will eventually turn into almond butter! I found my almond flour at Martins grocery store.**

Apple Banana Muffins

INGREDIENTS:

1 1/2 c almond flour 1/8 t salt 3/4 t baking soda 1 T melted butter, cooled (organic, grass fed) 2 large eggs (cage free, free range) 1 cup mashed bananas (about 2) 1/2 c chopped apple ( use your favorite or whatever is in season, chop into small pieces)

NOTE: You can also use 1 cup of almond flour and a 1/2 cup of flaxseed meal!

INSTRUCTIONS:

Preheat oven to 350 degrees. Combine the almond flour, salt and baking soda.

In a medium bowl, whisk together the butter and eggs and then stir into the dry ingredients.

Stir in the bananas and fold in the apple.

Spoon batter into muffin cups (makes about 8-9)

Bake for 30-40 minutes.
